Old-Fashioned Momma’s Meatloaf Recipe

Ingredients

For the Meatloaf:
  • 2 lbs (900g) ground beef (preferably 80/20 for flavor)
  • 1 medium onion, finely chopped
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup whole milk
  • 2 large eggs
  • 3 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried parsley
For the Glaze:
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard (yellow or Dijon)
  • 1 tsp Worcestershire sauce

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, chopped onion, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, garlic powder, salt, pepper, and parsley.
    • Mix gently with your hands until just combined. Overmixing can make the meatloaf tough.
  3. Shape the Meatloaf:
    • Transfer the meat mixture to the prepared loaf pan or baking sheet. Shape it into a loaf.
  4. Make the Glaze:
    • In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire sauce.
    • Spread half the glaze over the top of the meatloaf. Reserve the other half for later.
  5. Bake the Meatloaf:
    • Bake in the preheated oven for 45 minutes. Remove, spread the remaining glaze over the top, and bake for another 15 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Rest and Serve:
    • Let the meatloaf rest for 10 minutes before slicing. This helps it hold its shape and retain juices.
    • Serve with classic sides like mashed potatoes, green beans, or buttered corn.
