Ingredients:
- 4 medium potatoes, peeled and diced into 1/2-inch cubes
- 1 large onion, sliced
- 14 oz smoked Polish sausage, sliced into 1/4-inch rounds
- 2 tbsp olive oil or butter
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions:
- Prepare the Potatoes
Place the diced potatoes in a pot of salted water. Bring to a boil and cook for 5 minutes to slightly soften. Drain and set aside. - Cook the Sausage
Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add the sliced sausage and cook for 5–7 minutes until browned. Remove from the skillet and set aside. - Sauté the Onions
In the same skillet, add the onions and cook for 3–4 minutes until they soften and begin to caramelize. - Fry the Potatoes
Add the remaining olive oil or butter to the skillet. Toss in the parboiled potatoes. Season with garlic powder, paprika, salt, and pepper. Fry for 10–15 minutes, stirring occasionally, until the potatoes are golden and crispy. - Combine and Serve
Return the cooked sausage to the skillet. Toss everything together and cook for an additional 3–5 minutes to meld the flavors. - Garnish and Enjoy
Sprinkle with fresh parsley, if desired, and serve hot.
Tips:
- Add bell peppers for extra color and flavor.
- For a spicy kick, toss in some crushed red pepper flakes or a dash of hot sauce.
- Serve with a side of eggs or a dollop of sour cream for a complete meal.
