Decadent No-Bake Chocolate Éclair Dessert:

Ingredients:

  • For the Layers:
    • 2 (3.4 oz each) boxes of instant vanilla pudding mix
    • 3 cups cold milk
    • 8 oz cream cheese, softened
    • 1 cup heavy whipping cream (or 8 oz whipped topping)
    • 1 tsp vanilla extract
    • 1 box graham crackers (about 16 oz)
  • For the Chocolate Ganache Topping:
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup heavy cream
    • 1 tbsp unsalted butter

Instructions:

  1. Prepare the Pudding Mixture:
    • In a large bowl, whisk together the vanilla pudding mix and cold milk until thickened. Set aside.
    • In another bowl, beat the cream cheese until smooth. Slowly add it to the pudding mixture and beat until well combined.
    • Whip the heavy cream with vanilla extract until stiff peaks form, then gently fold it into the pudding mixture (or mix in the whipped topping). Set aside.
  2. Layer the Dessert:
    • In a 9×13-inch baking dish, place a single layer of graham crackers, covering the bottom.
    • Spread half of the pudding mixture evenly over the graham crackers.
    • Add another layer of graham crackers on top of the pudding.
    • Spread the remaining pudding mixture over the crackers, then finish with a final layer of graham crackers.
  3. Prepare the Ganache Topping:
    • In a microwave-safe bowl, heat the heavy cream until it starts to simmer (about 1 minute).
    • Pour the hot cream over the chocolate chips and let it sit for 2 minutes. Add the butter and whisk until smooth and glossy.
    • Let the ganache cool slightly, then pour it evenly over the top graham cracker layer.
  4. Chill and Serve:
    • Cover the dish and refrigerate for at least 6 hours or overnight to allow the flavors to meld and the graham crackers to soften.
