Ingredients:
- For the Layers:
- 2 (3.4 oz each) boxes of instant vanilla pudding mix
- 3 cups cold milk
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream (or 8 oz whipped topping)
- 1 tsp vanilla extract
- 1 box graham crackers (about 16 oz)
- For the Chocolate Ganache Topping:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 tbsp unsalted butter
Instructions:
- Prepare the Pudding Mixture:
- In a large bowl, whisk together the vanilla pudding mix and cold milk until thickened. Set aside.
- In another bowl, beat the cream cheese until smooth. Slowly add it to the pudding mixture and beat until well combined.
- Whip the heavy cream with vanilla extract until stiff peaks form, then gently fold it into the pudding mixture (or mix in the whipped topping). Set aside.
- Layer the Dessert:
- In a 9×13-inch baking dish, place a single layer of graham crackers, covering the bottom.
- Spread half of the pudding mixture evenly over the graham crackers.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining pudding mixture over the crackers, then finish with a final layer of graham crackers.
- Prepare the Ganache Topping:
- In a microwave-safe bowl, heat the heavy cream until it starts to simmer (about 1 minute).
- Pour the hot cream over the chocolate chips and let it sit for 2 minutes. Add the butter and whisk until smooth and glossy.
- Let the ganache cool slightly, then pour it evenly over the top graham cracker layer.
- Chill and Serve:
- Cover the dish and refrigerate for at least 6 hours or overnight to allow the flavors to meld and the graham crackers to soften.
