Broccoli Cheese Patties

Ingredients:

  • 2 cups cooked broccoli, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 1 cup breadcrumbs (panko or regular)
  • 2 large eggs, lightly beaten
  • 2 garlic cloves, minced (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • Olive oil for frying

Instructions:

  1. Prepare the mixture:
    • In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, minced garlic, salt, and black pepper. Mix until well combined.
  2. Form patties:
    • Scoop about 2 tablespoons of the mixture and form it into small, flat patties. Repeat until all the mixture is used.
  3. Cook the patties:
    • Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
    • Place the patties in the skillet and cook for 3–4 minutes per side, or until golden brown and crispy.
    • Work in batches if necessary, adding more oil between batches if needed.
  4. Serve:
    • Transfer the cooked patties to a plate lined with paper towels to remove excess oil.
    • Serve warm with your favorite dipping sauce, such as ranch, sour cream, or spicy mayo.
