Ingredients

  • 3 cups frozen hash brown potatoes, thawed
  • 1 cup cooked ham, diced (or substitute bacon/sausage)
  • 1/2 cup green onions, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (optional)
  • 4 large eggs
  • 1 (12 oz) can evaporated milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the Oven
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with cooking spray.
  2. Layer the Ingredients
    • Spread the thawed hash browns evenly in the bottom of the baking dish.
    • Sprinkle the diced ham and green onions over the hash browns.
    • Top with the shredded cheeses.
  3. Prepare the Egg Mixture
    • In a medium bowl, whisk together the eggs, evaporated milk, salt, and black pepper until fully combined.
  4. Combine and Bake
    • Pour the egg mixture evenly over the layers in the baking dish.
