Ingredients

For the Crust:

  • 1 cup almond flour
  • 2 tbsp coconut oil, melted
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

For the Cheesecake Layer:

  • 1 1/2 cups Greek yogurt (plain, unsweetened)
  • 8 oz cream cheese, softened (use low-fat or Neufchâtel for a lighter option)
  • 1/4 cup honey or pure maple syrup
  • 1 tsp vanilla extract
  • 1 large egg

For the Strawberry Layer:

  • 1 1/2 cups fresh strawberries, chopped
  • 2 tbsp honey or maple syrup
  • 1 tbsp lemon juice

Instructions

  1. Preheat the Oven
    • Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. Make the Crust
    • In a bowl, mix the almond flour, melted coconut oil, maple syrup, and vanilla extract until crumbly.
    • Press the mixture evenly into the bottom of the prepared baking dish. Bake for 8-10 minutes until lightly golden. Set aside to cool.
  3. Prepare the Cheesecake Layer
    • In a large bowl, whisk together the Greek yogurt, cream cheese, honey (or maple syrup), vanilla extract, and egg until smooth and creamy.
    • Pour the cheesecake mixture over the cooled crust and spread it evenly.
  4. Make the Strawberry Layer
    • In a small saucepan, combine the strawberries, honey (or maple syrup), and lemon juice. Cook over medium heat for about 5 minutes, stirring occasionally, until the strawberries break down and the mixture thickens slightly.
    • Gently spoon the strawberry mixture over the cheesecake layer.
  5. Bake the Bars
    • Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool completely at room temperature.
  6. Chill
    • Refrigerate the bars for at least 2-3 hours, or until fully set.
  7. Slice and Serve
    • Once chilled, slice into squares and serve!

Tips:

  • Store the bars in an airtight container in the fridge for up to 5 days.
  • For a nut-free version, replace almond flour with oat flour.
  • Add a sprinkle of coconut flakes or sliced almonds for extra texture.

These Clean Eating Strawberry Cheesecake Bars deliver creamy, fruity goodness without refined sugars or processed ingredients—perfect for a healthier dessert or snack option! 🍓🍰
