Here’s a recipe for a delicious Mounds Cake, inspired by the classic candy bar!

Mounds Cake Recipe

Ingredients:

For the Cake:
  • 1 box of chocolate cake mix (or homemade if preferred)
  • Ingredients called for on the cake mix box (usually eggs, oil, and water)
For the Coconut Filling:
  • 2 cups sweetened shredded coconut
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
For the Chocolate Glaze:
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 tbsp butter

Instructions:

  1. Prepare the Cake:
    • Preheat your oven according to the instructions on the cake mix box.
    • Grease and flour a 9×13-inch baking dish (or use parchment paper).
    • Prepare the cake mix according to the box instructions and pour it into the prepared pan.
    • Bake according to the cake mix package directions, usually around 30-35 minutes, or until a toothpick inserted comes out clean.
    • Let the cake cool completely.
  2. Prepare the Coconut Filling:
    • In a medium bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt.
    • Stir until well combined. The mixture will be thick and sticky.
    • Once the cake has cooled, use a spoon or spatula to spread the coconut mixture evenly over the top of the cake.
  3. Make the Chocolate Glaze:
    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
    • Remove from heat and add the chocolate chips and butter. Stir until smooth and fully combined.
    • Allow the glaze to cool slightly before pouring it over the coconut-covered cake.
  4. Finish the Cake:
    • Pour the chocolate glaze over the coconut layer, spreading it out evenly with a spatula.
    • Let the cake sit for about 30 minutes to allow the glaze to set before cutting and serving.
