Ingredients:
For the Dip:
- 1 lb (450 g) hot Italian sausage (casings removed)
- 1 tablespoon olive oil (optional, if needed)
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup (240 ml) beer (lager or pale ale works best)
- 1 cup (240 ml) heavy cream or half-and-half
- 2 cups (200 g) shredded sharp cheddar cheese
- 1 cup (100 g) shredded mozzarella cheese
- 1/4 cup (25 g) Parmesan cheese (grated)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra spice)
- Salt and pepper, to taste
For Garnish:
- 2 green onions, thinly sliced
- Chopped parsley (optional)
Instructions:
- Cook the Sausage:
- In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles as it cooks. Remove and drain excess grease if needed. Set aside.
- Make the Roux:
- In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes until lightly golden and bubbly.
- Add the Beer and Cream:
- Gradually whisk in the beer, ensuring there are no lumps. Add the heavy cream and cook for 2–3 minutes until the mixture thickens slightly.
- Melt the Cheese:
- Lower the heat and stir in the Dijon mustard, smoked paprika, cayenne (if using), and a pinch of salt and pepper. Gradually add the cheddar, mozzarella, and Parmesan, stirring until smooth and creamy.
- Combine and Heat:
- Stir the cooked sausage into the cheese sauce. Cook for another 2–3 minutes until everything is heated through and well combined.
- Serve:
- Transfer the dip to a serving dish or keep it warm in a slow cooker. Garnish with green onions and parsley. Serve immediately with your favorite dippers!
Dipper Ideas:
- Soft pretzels
- Crusty bread or baguette slices
- Tortilla chips
- Celery or carrot sticks
Tips:
- For a smoky flavor, try adding cooked, crumbled bacon along with the sausage.
- Prefer a non-alcoholic version? Substitute the beer with chicken broth or soda water.
- Make it ahead: Prepare the dip and reheat on low heat before serving, stirring occasionally.
