Apple and Cinnamon Cake Recipe

Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup (180ml) buttermilk
  • 2 medium apples (about 2 cups), peeled, cored, and diced

For the topping:

  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg (if using), and salt. Set aside.
  3. Cream butter and sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add eggs and vanilla: Beat in eggs, one at a time, followed by the vanilla extract.
  5. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with the dry ingredients. Mix just until combined.

  8. Bake: Pour the batter into the prepared pan. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool and serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
