Ingredients:
- 2 cups cooked broccoli, finely chopped
- 1 cup shredded cheddar cheese
- 1/3 cup grated Parmesan cheese
- 1 cup breadcrumbs (panko or regular)
- 2 large eggs, lightly beaten
- 2 garlic cloves, minced (optional)
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (adjust to taste)
- Olive oil for frying
Instructions:
- Prepare the mixture:
- In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, minced garlic, salt, and black pepper. Mix until well combined.
- Form patties:
- Scoop about 2 tablespoons of the mixture and form it into small, flat patties. Repeat until all the mixture is used.
- Cook the patties:
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
- Place the patties in the skillet and cook for 3–4 minutes per side, or until golden brown and crispy.
- Work in batches if necessary, adding more oil between batches if needed.
- Serve:
- Transfer the cooked patties to a plate lined with paper towels to remove excess oil.
- Serve warm with your favorite dipping sauce, such as ranch, sour cream, or spicy mayo.
Enjoy your crispy and cheesy broccoli patties! 🌟
