Easy Crepes Recipe


Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 large eggs
  • 1 1/2 cups (360ml) milk
  • 2 tbsp (30g) melted butter or oil
  • 1/4 tsp salt
  • 1 tbsp (12g) sugar (optional, for sweet crepes)
  • 1/2 tsp vanilla extract (optional, for sweet crepes)

Instructions:

  1. Mix the Batter
    In a blender, combine the flour, eggs, milk, melted butter, salt, and optional sugar/vanilla (if making sweet crepes). Blend until smooth. Alternatively, whisk together in a bowl until no lumps remain. Let the batter rest for 15–30 minutes to eliminate air bubbles.
  2. Preheat the Pan
    Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter or cooking spray.
  3. Cook the Crepes
    • Pour about 1/4 cup of batter into the center of the pan.
    • Quickly tilt and rotate the pan to spread the batter evenly into a thin circle.
    • Cook for 1–2 minutes or until the edges start to lift and the bottom is golden. Flip and cook for another 30 seconds to 1 minute.
  4. Stack and Serve
    Place the cooked crepes on a plate, stacking them with parchment paper in between to prevent sticking. Repeat with the remaining batter.

Sweet or Savory Fillings:

  • Sweet Ideas: Nutella, fresh fruits, whipped cream, jam, or powdered sugar.
  • Savory Ideas: Ham and cheese, sautéed mushrooms, spinach and feta, or smoked salmon.
