Crockpot Pierogi Casserole with Kielbasa

This creamy, cheesy comfort dish combines tender pierogis, smoky kielbasa, and rich flavors, all slow-cooked to perfection!

Ingredients

  • 2 boxes (16 oz each) frozen pierogis (potato and cheese flavor works best)
  • 1 lb kielbasa, sliced into 1/2-inch rounds
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp butter
  • Optional: chopped parsley for garnish

Instructions

  1. Prep the Crockpot
    • Spray your crockpot with non-stick cooking spray to prevent sticking.
  2. Layer the Ingredients
    • Place the frozen pierogis evenly in the bottom of the crockpot.
    • Scatter the sliced kielbasa and chopped onions over the pierogis.
  3. Make the Sauce
    • In a bowl, mix together the chicken broth, heavy cream, garlic powder, onion powder, salt, and pepper.
    • Pour this mixture evenly over the pierogis and kielbasa.
    • Dot the top with butter for added richness.
  4. Cook
    • Cover and cook on LOW for 3-4 hours or HIGH for 2 hours, until the pierogis are heated through and tender.
  5. Add Cheese
    • About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top. Cover again and let the cheese melt.
  6. Serve
    • Garnish with chopped parsley (optional) and serve warm.

Tips:

  • If you want a little extra flavor, add a sprinkle of smoked paprika or crushed red pepper flakes.
  • For a crispy touch, transfer portions to a baking dish, sprinkle extra cheese on top, and broil for a few minutes.

This Crockpot Pierogi Casserole with Kielbasa is a fuss-free, hearty meal perfect for busy weeknights! Enjoy the creamy, cheesy goodness. 🥘✨
