Doritos Taco Salad

A crunchy, flavorful, and colorful salad loaded with seasoned ground beef, fresh vegetables, and cheesy Doritos, all tossed in a zesty dressing. Perfect for potlucks, family dinners, or game day!


Ingredients

For the Salad:

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning mix (or homemade taco seasoning)
  • 3/4 cup water
  • 6–8 cups romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion (diced)
  • 1/2 cup black beans (rinsed and drained, optional)
  • 1/2 cup corn (optional, fresh or canned)
  • 1 avocado (diced, optional)
  • 2 cups Doritos (crushed, any flavor you prefer—Nacho Cheese or Cool Ranch work great)

For the Dressing:

  • 1/2 cup ranch dressing
  • 1/2 cup salsa (your preferred level of spiciness)
  • 2 tablespoons sour cream (optional, for creaminess)

Instructions

Step 1: Cook the Ground Beef

  1. In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  2. Add the taco seasoning and water to the skillet. Simmer for 5 minutes until the sauce thickens. Set aside to cool slightly.

Step 2: Prepare the Dressing

  1. In a small bowl, whisk together ranch dressing, salsa, and sour cream (if using) until smooth. Adjust seasoning to taste.

Step 3: Assemble the Salad

  1. In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, shredded cheese, red onion, black beans, and corn.
  2. Add the slightly cooled taco-seasoned ground beef.

Step 4: Add the Crunch

  1. Right before serving, toss in the crushed Doritos and mix gently to combine.

Step 5: Drizzle the Dressing

  1. Pour the dressing over the salad and toss until everything is evenly coated.

Step 6: Garnish and Serve

  1. Top with diced avocado (if using) and additional Doritos or shredded cheese for extra flair. Serve immediately!

Tips:

  • Serve the salad immediately after adding Doritos to maintain the crunch.
  • Customize with your favorite taco toppings like jalapeños, green onions, or a squeeze of lime.
  • For a healthier option, use baked tortilla chips instead of Doritos.
