This comforting meat and potato casserole combines layers of seasoned meat, tender potatoes, and creamy, cheesy goodness. It’s a family favorite for any weeknight dinner!

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 medium onion, finely chopped
  • 4 medium potatoes, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 can (10.5 oz) cream of mushroom soup or cream of chicken soup
  • 1/4 cup breadcrumbs (optional)
  • 2 tbsp butter, melted (optional, for topping)

Instructions:

  1. Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the Meat
In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and the onion is soft. Drain any excess fat. Season with garlic powder, paprika, salt, and pepper.
  3. Prepare the Potatoes
Peel and thinly slice the potatoes, about 1/8-inch thick, for even cooking.
  4. Mix the Sauce
In a bowl, combine the milk, heavy cream, and cream of mushroom soup. Stir until smooth.
  5. Assemble the Casserole
    • Spread half of the sliced potatoes in the prepared baking dish.
    • Layer with half of the cooked meat mixture.
    • Pour half of the sauce over the meat.
    • Repeat with the remaining potatoes, meat, and sauce.
  6. Add Cheese and Breadcrumb Topping
    • Sprinkle the shredded cheddar cheese evenly over the top.
    • If using breadcrumbs, mix them with melted butter and sprinkle on top for added crunch.
  7. Bake
Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the top is golden and bubbly.
  8. Serve
Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Tips:

  • Swap the cream of mushroom soup for cream of celery or a homemade roux if preferred.
  • Add extra vegetables like carrots, peas, or green beans for variety.
  • For a spicier version, mix in a pinch of cayenne pepper or diced jalapeños.
