Old-Fashioned Momma’s Meatloaf Recipe
Servings: 6-8
Prep Time: 15 minutes
Cook Time: 1 hour
Ingredients
For the Meatloaf:
- 2 lbs (900g) ground beef (preferably 80/20 for flavor)
- 1 medium onion, finely chopped
- 1 cup breadcrumbs (plain or seasoned)
- ½ cup whole milk
- 2 large eggs
- 3 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried parsley
For the Glaze:
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard (yellow or Dijon)
- 1 tsp Worcestershire sauce
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, chopped onion, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, garlic powder, salt, pepper, and parsley.
- Mix gently with your hands until just combined. Overmixing can make the meatloaf tough.
- Shape the Meatloaf:
- Transfer the meat mixture to the prepared loaf pan or baking sheet. Shape it into a loaf.
- Make the Glaze:
- In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire sauce.
- Spread half the glaze over the top of the meatloaf. Reserve the other half for later.
- Bake the Meatloaf:
- Bake in the preheated oven for 45 minutes. Remove, spread the remaining glaze over the top, and bake for another 15 minutes, or until the internal temperature reaches 160°F (70°C).
- Rest and Serve:
- Let the meatloaf rest for 10 minutes before slicing. This helps it hold its shape and retain juices.
- Serve with classic sides like mashed potatoes, green beans, or buttered corn.
Tips for a Perfect Meatloaf:
- Breadcrumbs: Use panko for a lighter texture or crushed crackers for a buttery flavor.
- Milk Substitute: Swap milk with beef broth for extra flavor.
- Add-ins: Finely chopped bell peppers or shredded carrots add moisture and nutrients.
